Sorry for the trouble!
Since the Pocket Lists app on your device is synced with your PocketLists.com cloud account, you may simply re-install the app from the App Store in such a case. Once installed, tap "Start Fresh" and sync it back with your account. All the data will be downloaded to your device ensuring the app local data storage is ok (it appears that something's wrong here right now which results into an endless 'Updating' status).
When signing into your account, please be sure to select the very same sign in option you've initially used for creating an account — either 'Sign in with Apple' or the classic 'Sign in with email' one.
