Apple Watch entry using Watch keyboard

I have option to write with my finger, use speech to text or use iPhone keyboard to enter on Apple Watch. I want to be able to “type” the entry on Apple Watch. I thought I could when I first set up the app, but can’t now. I might be confusing it with another app, but I hope not.
