The app performance is indeed prone to reduce when the volume of an on-screen data exceeds its "reasonably expected limits". Depending on an iPhone model, hundreds of lists or thousands of to-do items displayed on screen at a time may cause a delay on load (longer delays on older iPhone devices and minor or almost no delays on newer ones).
We have tested the app performance on nearly 500+ lists and 1000+ items per list, and observed the performance decrease on older device models only (such as iPhone 6, iPhone 6S, iPhone SE). Almost no noticeable delays were observed on newer iPhone X, XS, XR and similar models.
Though, the current version may be not that convenient for working with such big amounts of lists (500+) and items (1000+ per list) not due to the interface feedback speed, but due to the plain structure of the user interface design. Working with such big lists require grouping functionality — folders, projects, etc — which the Pocket Lists app does not offer in full at the moment.
Grouping functionality is planned for future Pocket Lists releases. We don't have any information of the ETA, but we'll do our best to thoroughly test the app under these conditions and to make it work great with lists when there are hundreds or thousands of list entries displayed on a screen at a time.
